Last night I made a cake for my women's home team that meets tonight. We are having taco salad for dinner together so I thought something fresh for dessert was appropriate! I bought a new cookbook a couple of weeks ago and was dying to try it out so last night was the perfect opportunity.
Recipe from "101 Things To Do With A Cake Mix"
Ingredients:
1 lemon cake mix
1 cup frozen lemonade concentrate thawed
1 cup powdered sugar
1 container lemon or vanilla frosting
(I am a Duncan Hines cake mix kind of gal, super moist yummy cake if you are using a mix! I also went with the vanilla frosting b/c I felt like lemon would have been overkill.)
Heat oven to 350 degrees. Prepare and bake cake as directed on package in greased 9 x 13 pan. Cool for 15 minutes. Stir together lemonade concentrate and powdered sugar.
(Make sure your concentrate is COMPLETELY thawed so the sugar absorbs properly)
Poke holes in warm cake with a fork. Drizzle lemonade mixture evenly over cake, refrigerate until cold.
(Poke holes ALL OVER like the crazy stabby kind of lady you are...take that bad day out on the cake!)
Spread frosting over cake.
( I chose to use a disposable pan since it has to be served in the pan it was cooked in. Don't let peeps scratch the coating off of your good non-sticks when they cut into the cake...just sayin!)
Cover and refrigerate leftover cake. ENJOY!!
