Simple Lemon Bars
Hi! My name is Sécia from over at petite insanities! I'm so happy to have the opportunity to participate in the lovely Christina's Bloggerversary celebrations. When she first asked if I'd like to post something to celebrate, I knew exactly what I wanted to do… I've been dying to try this lemon bar recipe for months and finally had an excuse! I have to say, they're fantastic and super easy to make. They've even inspired me to have a tea party this summer. Make sure to make a couple of batches because these things go FAST!
Here's what you need…
For the crust:
1 cup all-purpose flour
1/8 teaspoon salt
1/2 cup confectioner’s sugar
1 stick (8 tablespoons) butter, melted but not hot
For the filling:
2 large eggs
3/4 cup sugar
1 1/2 tablespoons all-purpose flour
6 tablespoons fresh lemon juice (about 2 lemons)
2 teaspoons finely grated lemon zest
Heat oven to 325 degrees. Spray an 8x8 inch baking pan with vegetable cooking spray. Fit a piece of foil across the pan bottom and up 2 of the sides. Make sure the foil overhangs to the pull bars from the pan. Spray again with vegetable cooking spray.
Mix flour, salt and confectioner’s sugar in a medium bowl; stir in butter to form dough. Press dough into pan bottom (the bottom of a measuring cup dipped in flour helps press it down evenly). Bake until pale golden, about 20 minutes.
While pastry bakes, whisk eggs, sugar, flour, lemon juice and zest in a medium bowl.
Remove pan from oven. Add lemon mixture and continue to bake until just set; about 20 minutes longer. Let cool in pan for a few minutes and then using foil handles, pull bars from pan and set on a wire rack. Cool until room temperature. Cut into 1x1 inch squares, dust lightly with more confectioner's sugar and serve.
